Canada is the ideal environment for making Icewine. To produce superior Icewine, summers must be hot and winters cold and sharp. Only Ontario has a winter climate cold enough to ensure an annual Icewine crop. Grapes are picked frozen at -10˚C (14°F), in the middle of the night, to capture peak quality. They are immediately pressed to extract water in the form of ice crystals, leaving only a tiny amount of pure, concentrated nectar. About three kilograms (seven pounds) of grapes are required to produce a single 0.375L bottle of Icewine—the same quantity would yield ten times as much table wine.
